Ingredients
2 chicken breasts, sliced horizontally into cutlets
2 tablespoons olive oil
1 teaspoon chipotle powder or chipotle paste
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup mayonnaise
1 teaspoon chipotle powder or chipotle paste
1 teaspoon lemon juice
4 sandwich buns
1 cup lettuce
1/2 cup tomato slices
1/4 cup red onion slices
Instructions
1. Slice chicken breasts horizontally into thinner cutlets for even cooking.
2. Coat chicken with olive oil, chipotle powder, smoked paprika, garlic powder, salt, and black pepper. Let it sit briefly to absorb seasoning.
3. In a small bowl, mix mayonnaise, chipotle, and lemon juice until smooth to create the sauce.
4. Heat grill or pan over medium high heat and cook chicken for 4 to 5 minutes per side until fully cooked with slight charring.
5. Let chicken rest briefly, then spread or brush chipotle sauce over the warm chicken.
6. Lightly toast sandwich buns, then layer lettuce, chicken, tomato slices, and red onion.
7. Add extra sauce if desired, close sandwich, and serve immediately.
