Ingredients
2 cups cooked chicken breast, shredded or sliced
2 cups fresh spinach
1 cup fresh strawberries, sliced
1/4 cup chopped walnuts
1/4 cup thinly sliced red onion
1/3 cup plain yogurt or light dressing
1 tablespoon lemon juice
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Prepare the chicken by shredding or slicing cooked chicken breast into bite-sized pieces.
2. Slice the strawberries, thinly cut the red onion, and rinse and dry the spinach thoroughly.
3. In a small bowl, mix yogurt or dressing with lemon juice and olive oil until smooth.
4. Add spinach to a large bowl, then layer chicken, strawberries, walnuts, and red onion on top.
5. Drizzle the dressing over the salad.
6. Gently toss everything together until lightly coated, being careful not to crush the strawberries.
7. Taste and adjust seasoning with salt and black pepper if needed.
8. Serve immediately or chill briefly before serving.
