Ingredients
2 cups cooked chicken breast, shredded or sliced
2 cups shredded cabbage or lettuce
1/2 cup shredded carrots
1/4 cup sliced bell pepper
2 tablespoons chopped green onions
1/4 cup chopped peanuts
1/3 cup peanut butter
1 tablespoon lemon juice
1 tablespoon olive oil
2 tablespoons warm water
1 teaspoon honey or maple syrup
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Prepare the chicken by shredding or slicing cooked chicken breast into bite-sized pieces.
2. Shred the cabbage or lettuce, grate the carrots, slice the bell pepper, and chop the green onions.
3. In a bowl, mix peanut butter, lemon juice, olive oil, honey or maple syrup, salt, and black pepper.
4. Add warm water gradually while mixing until the dressing becomes smooth and pourable.
5. Add the chicken, vegetables, and chopped peanuts into a large bowl.
6. Pour the peanut dressing over the salad.
7. Gently toss everything together until evenly coated without crushing the vegetables.
8. Taste and adjust seasoning if needed.
9. Serve immediately or chill briefly before serving.

Add warm water slowly to control dressing consistency.
